Biltong Recipes Part 1

Biltong is not only delicious on it’s own, but it’s also fantastic in cooking! We’ve been busy here on the farm, trying and testing a host of different biltong infused recipes. We’ve found some that we really like, so here’s part 1 of our list of the best biltong recipes!

BILTONG CREAM CHEESE SPREAD

This one is quick and easy and a real crowd pleaser! Spice it up by using a few of our different flavours, use Peri Peri flavour for a bit of a kick!

Ingredients

  • 125 g smooth cream cheese with chives
  • 30 ml mayonnaise
  • 30 ml lemon juice
  • 60 g biltong
  • Salt & freshly ground black pepper to taste

Method

Combine all the ingredients in a blender and spread between slices of bread and then toast in an electric sandwich maker. Spread on slices of whole-wheat bread and garnished with thin slices of lemon or cucumber.

Spread on canapés - cut slices of bread into rounds or fingers, fry in cooking oil until golden brown. Cool and then spread with biltong mixture and garnish with sliced olives or gherkins.

BILTONG AND AVOCADO SALAD

Ingredients

  • 200 g BBQ Biltong
  • 1 packet mixed lettuce salad leaves
  • 1 large, avocado (peeled and diced)
  • 250 g cocktail tomatoes (halved)
  • 1 cucumber (sliced)
  • 50 g feta cheese (diced)
  • 50 g pitted black olives
  • 125 ml salad dressing of your choice


Method:

Rinse salad leaves and drain thoroughly. In a large salad bowl, add lettuce leaves, biltong, diced avocado, cocktail tomatoes, cucumber, feta cheese and olives. Toss together and refrigerate. Before serving, sprinkle dressing over salad.


BILTONG MUFFINS

Ingredients:

  • 120 g Whole-wheat flour (sifted)
  • 120 g Cake flour (sifted)
  • 200 g Biltong sprinkly bits
  • 50 g Cheddar Cheese (grated)
  • 30 ml Baking powder (sifted)
  • 3 Eggs (lightly whisked)
  • 200 ml Milk
  • 100 ml Cooking oil
  • 15 ml Lemon juice

Method:

Combine together all the dry ingredients and then add the eggs, milk, oil and lemon juice. Mix gently until the ingredients are incorporated. Spoon into greased muffin pans, and bake at 220° C for 11 minutes. Leave to cool slightly before removing and serving with butter. Serves 10 people.
